
Kongu Chicken
Kongu country chicken, shallot-fried and pepper-warm. Slow-fried masala meets quick-cooking chicken — timing is everything. Plate with flaky paratha and sliced onions.
Ingredients
- Chicken500 g, bone-in pieces
- Ginger Garlic Paste2 tbsp
- Garam Masala1 tsp
- Saltto taste
- Onion3, finely sliced
- Tomato2, chopped
- Green Chili2, slit
- Coriander Powder2 tsp
- Turmeric Powder1/2 tsp
- Vegetable Oil3 tbsp
- Curry Leaves2 sprigs
- Red Chili Powder1-2 tsp
- Black Pepper1 tsp
- Grated Coconut1 cup
Optional extras
- Kasuri Methi1 tsp
- Fresh Cilantro2 tbsp, chopped
Instructions

Wash and pat the chicken dry; marinate with salt, turmeric, chili powder and ginger garlic paste for at least 30 minutes.

Brown the onions properly in hot oil, eight to ten minutes, till bronze and sweet.

Add ginger garlic paste, cook two minutes, then the tomato and ground spices; bhunao till the oil separates.

Turn the chicken through the masala with the grated coconut, let it sear, then pour in warm water and cover.

Reduce to your preferred consistency, rest five minutes, and finish with the curry leaves and cilantro.

Don't crowd the pan; steam is the enemy of the browning that builds flavour.
