
Badami Gosht
Almond mutton korma, saffron-threaded and celebration-ready. Long-cooked, spice-deep and Sunday-afternoon slow. Serve with steamed rice, rumali roti or plain parathas.
Ingredients
- Yogurt2 cups, whisked
- Ginger Garlic Paste2 tbsp
- Garam Masala1 tsp
- Saltto taste
- Onion3, thinly sliced
- Tomato2, chopped
- Coriander Powder2 tsp
- Turmeric Powder1 tsp
- Whole Garam Masala Spices2 tsp
- Saffrona pinch, soaked in warm milk
- Bay Leaf2
- Mutton500 g, on the bone
- Red Chili Powder2 tsp
- Mustard Oil3 tbsp
- Almonds1/4 cup, blanched and slivered
Optional extras
- Fresh Cilantro2 tbsp, chopped
Instructions

Wash the mutton and marinate with the almonds, yogurt, ginger garlic paste, salt and chili for at least two hours.

Get the oil properly hot, drop in bay, cardamom, cinnamon and cloves, and wait for the perfume.

Take the onions to mahogany, adding a pinch of salt to help them along.

Add the mutton with all its marinade, cook off the rawness, then add water for the long simmer.

Simmer covered till fork-tender, stirring now and then, then boil open to reduce; finish with the yogurt and garam masala.

Fresh spices make the dish — if yours smell of nothing, the dish will taste of nothing.
