Alleppey Fish Curry
Alleppey red fish curry, coconut milk and kokum against raw mango sour. Fresh fish, hot masala and the confidence to cook it briefly. Serve with steamed rice and lemon wedges.
Ingredients
- Ginger Garlic Paste1 tbsp
- Saltto taste
- Onion2, finely sliced
- Green Chili2, slit
- Coriander Powder1 tsp
- Turmeric Powder1/2 tsp
- Curry Leaves2 sprigs
- Lemon1
- Coconut Milk1 cup
- Fish500 g, steaks
- Red Chili Powder1 tsp
- Mustard Oil3 tbsp
- Kokum6-8 pieces
Optional extras
- Fresh Cilantro2 tbsp, chopped

Season the fish with salt and turmeric, and let it sit while the masala builds.

Sear the fish in hot oil, two minutes a side, and remove before it is fully done.

Build the masala in the fish oil: onions, paste, tomato, spices — fried till it darkens and gleams.

Pour in water or coconut milk, slide the fish back in with the coconut milk, and simmer gently five to seven minutes — no more.

Finish with the kokum, fresh coriander and a final drizzle of raw mustard oil if you have it.
Chef's tip
Resting the finished dish for five minutes off the heat lets the spices settle and deepen.
