
Mangalorean Fish Curry
Mangalore fish curry, byadgi-red with coconut-roast depth. Fresh fish, hot masala and the confidence to cook it briefly. Best with hot rice and a side of popped papad.
Ingredients
- Ginger Garlic Paste1 tbsp
- Saltto taste
- Onion2, finely sliced
- Green Chili2, slit
- Coriander Powder1 tsp
- Turmeric Powder1/2 tsp
- Dried Red Chilies1 tsp
- Lemon1
- Tamarind Paste2 tbsp
- Fish500 g, steaks
- Red Chili Powder1 tsp
- Mustard Oil3 tbsp
- Grated Coconut1 cup
Optional extras
- Fresh Cilantro2 tbsp, chopped
Instructions

Season the fish with salt and turmeric, and let it sit while the masala builds.

Sear the fish in hot oil, two minutes a side, and remove before it is fully done.

Soften the onions, add paste and tomato with the spices, and bhunao till thick and red.

Nestle the fish into the simmering gravy with the grated coconut; the residual heat finishes it.

Scatter the dried red chilies and cilantro, squeeze lemon over, and serve straight from the pan.
Chef's tip
A final squeeze of lemon or lime right before serving wakes up every other flavour.
