
Kesar Paneer Kofta
Soft paneer dumplings in saffron-cashew gravy, the wedding-feast kofta. A proper gravy curry — the kind that demands something bread-shaped for mopping. Serve with jeera rice or flaky parathas.
Ingredients
- Ginger Garlic Paste1 tbsp
- Garam Masala1 tsp
- Heavy Cream1/4 cup
- Saltto taste
- Paneer250 g, cubed
- Onion2, finely chopped
- Tomato3, chopped
- Green Chili2, slit
- Coriander Powder2 tsp
- Turmeric Powder1/2 tsp
- Vegetable Oil3 tbsp
- Saffrona pinch, soaked in warm milk
- Cashews1/4 cup
- Red Chili Powder1 tsp
Optional extras
- Kasuri Methi1 tsp
- Fresh Cilantro2 tbsp, chopped
Instructions

Heat oil in a heavy pot and brown the onions deeply — this patience is the whole flavour base.

Add ginger garlic paste and green chili; stir till the raw smell disappears.

Cook the tomato down into the spices, wetting with water a spoon at a time, to a thick red masala.

Stir in the paneer and cashews, saute five minutes, then add hot water and cook covered until done.

Swirl in cream or a spoon of whisked yogurt off the flame, then shower with cilantro.
Chef's tip
Blend half the gravy and stir it back for body without cream.
