
Mushroom Matar Masala
Mushrooms and peas in a cashew-tomato masala, the restaurant-style curry at home. Restaurant comfort, home kitchen effort — the masala does the heavy lifting. Serve with jeera rice or flaky parathas.
Ingredients
- Ginger Garlic Paste1 tbsp
- Garam Masala1 tsp
- Kasuri Methi1 tbsp
- Saltto taste
- Onion2, finely chopped
- Tomato3, chopped
- Green Chili2, slit
- Coriander Powder2 tsp
- Turmeric Powder1/2 tsp
- Vegetable Oil3 tbsp
- Green Peas1 cup
- Mushrooms250 g, quartered
- Cashews1/4 cup
- Red Chili Powder1 tsp
Optional extras
- Fresh Cilantro2 tbsp, chopped
Instructions

Soften the onions over medium heat till they slump and turn bronze at the edges.

Add ginger garlic paste with a splash of water and scrape up the browned bits.

Add the tomato with turmeric, chili and coriander powder; fry till the masala darkens and splits.

Add the mushrooms with the green peas, coat well, pour in hot water to just cover and simmer till tender.

Swirl in cream or a spoon of whisked yogurt off the flame, then shower with cilantro.
