
Palak Aur Makai ki Curry
Sweet corn kernels folded into creamy palak gravy, the dhaba-favourite makai palak. Slow-built masala, soft centres and a gravy that clings to the spoon. Serve with jeera rice or flaky parathas.
Ingredients
- Ginger Garlic Paste1 tbsp
- Garam Masala1 tsp
- Heavy Cream1/4 cup
- Kasuri Methi1 tbsp
- Saltto taste
- Spinach300 g, chopped
- Onion2, finely chopped
- Tomato3, chopped
- Green Chili2, slit
- Coriander Powder2 tsp
- Turmeric Powder1/2 tsp
- Vegetable Oil3 tbsp
- Red Chili Powder1 tsp
- Corn2 cups
Optional extras
- Fresh Cilantro2 tbsp, chopped
Instructions

Heat oil in a heavy pot and brown the onions deeply — this patience is the whole flavour base.

Stir in the ginger garlic paste and cook a full two minutes.

Tip in the tomato and the ground spices; bhunao until thick, glossy and the oil separates.

Add the spinach with the corn, coat well, pour in hot water to just cover and simmer till tender.

Finish with garam masala, a crush of kasuri methi and fresh cilantro; rest five minutes off the heat.
Chef's tip
Resting the finished dish for five minutes off the heat lets the spices settle and deepen.
