
Dahi Wale Baingan
Eggplant simmered in whisked yogurt with fennel, the Banarasi dahi baingan. Restaurant comfort, home kitchen effort — the masala does the heavy lifting. Ladle over steamed rice with sliced onions on the side.
Ingredients
- Yogurt2 cups, whisked
- Ginger Garlic Paste1 tbsp
- Garam Masala1 tsp
- Saltto taste
- Onion2, finely chopped
- Tomato3, chopped
- Ginger2-inch piece
- Green Chili2, slit
- Coriander Powder2 tsp
- Turmeric Powder1/2 tsp
- Vegetable Oil3 tbsp
- Eggplant2 medium (300 g), cubed
- Red Chili Powder1 tsp
- Fennel1 tsp
Optional extras
- Kasuri Methi1 tsp
- Fresh Cilantro2 tbsp, chopped
Instructions

Fry the onions with a pinch of salt till deep golden; eight to ten minutes, and worth every one.

Add ginger garlic paste with a splash of water and scrape up the browned bits.

Cook the tomato down into the spices, wetting with water a spoon at a time, to a thick red masala.

Stir in the eggplant and yogurt, saute five minutes, then add hot water and cook covered until done.

Kill the heat and let it sit; finish with cilantro and a squeeze of lemon at the table.
Chef's tip
Whisked yogurt goes in off the heat or it will split.
