
Oats Aur Moong Khichdi
Oats and moong khichdi, the modern light dinner of diet-conscious India. Soft, soupy and unreasonably comforting — the dish every Indian household prescribes. Serve hot with papad, pickle and a big spoon of ghee.
Ingredients
- Ginger Garlic Paste1 tsp
- Saltto taste
- Onion1, finely chopped
- Tomato1, chopped
- Ginger2-inch piece
- Green Chili1, slit
- Cumin Seeds1 tsp
- Ghee3 tbsp
- Turmeric Powder1/2 tsp
- Asafoetidaa pinch
- Yellow Moong Dal1 cup, rinsed
- Rolled Oats1 cup
Optional extras
- Fresh Cilantro2 tbsp, chopped
Instructions

Rinse the rice and the rolled oats together till the water runs clear; soak 20 minutes and drain.

Melt the ghee, add cumin and a bay leaf, and let the kitchen smell like comfort.

Fry the onion till golden, add ginger garlic paste, tomato and the ground spices; cook till jammy.

Stir in the rice and rolled oats, toast briefly, then add water, salt and half the cilantro.

Pressure-cook for 3 whistles (or simmer covered till mushy-soft), rest, then stir well and top with ghee, cilantro and crispy fried onions.

The right consistency pours like thick pancake batter — add hot water to fix.
