
Dal Palak Khichdi
Moong khichdi with spinach stirred through, iron-rich and gentle. Soft, soupy and unreasonably comforting — the dish every Indian household prescribes. Classic pairing: kadhi alongside, achaar on the side.
Ingredients
- Ginger Garlic Paste1 tsp
- Saltto taste
- Spinach300 g, chopped
- Onion1, finely chopped
- Tomato1, chopped
- Ginger2-inch piece
- Green Chili1, slit
- Cumin Seeds1 tsp
- Ghee3 tbsp
- Turmeric Powder1/2 tsp
- Asafoetidaa pinch
- Yellow Moong Dal1 cup, rinsed
Optional extras
- Fresh Cilantro2 tbsp, chopped
Instructions

Combine the rice and yellow moong dal, rinse twice, and keep them ready in a bowl.

Warm the ghee, drop in cumin seeds and let them darken a shade before anything else.

Soften the onion, add the paste and tomato with turmeric, and cook until the tomato splits.

Stir in the rice and yellow moong dal, toast briefly, then add water, salt and half the cilantro.

Let the cooker release naturally, beat the khichdi with a ladle till creamy, and serve swimming in extra ghee.
Chef's tip
Taste as you go — chili heat, salt and sourness should all lift each other, not fight.
