
Dalma Khichdi Odia Style
Odia dalma spirit folded into soft khichdi, the temple-bhog one-pot. Soft, soupy and unreasonably comforting — the dish every Indian household prescribes. Serve hot with papad, pickle and a big spoon of ghee.
Ingredients
- Ginger Garlic Paste1 tsp
- Saltto taste
- Onion1, finely chopped
- Tomato1, chopped
- Green Chili1, slit
- Cumin Seeds1 tsp
- Ghee3 tbsp
- Turmeric Powder1/2 tsp
- Rice3/4 cup
- Yellow Lentils (Toor Dal)1 cup, rinsed
- Asafoetidaa pinch
- Mixed Vegetables1 cup, chopped
Optional extras
- Fresh Cilantro2 tbsp, chopped
Instructions

Combine the rice and rice, rinse twice, and keep them ready in a bowl.

Warm the ghee, drop in cumin seeds and let them darken a shade before anything else.

Fry the onion till golden, add ginger garlic paste, tomato and the ground spices; cook till jammy.

Stir in the rice and rice, toast briefly, then add water, salt and half the cilantro.

Let the cooker release naturally, beat the khichdi with a ladle till creamy, and serve swimming in extra ghee.
Chef's tip
Resting the finished dish for five minutes off the heat lets the spices settle and deepen.
