
Sabudana Khichdi Aur Peanuts
Pearl-sago khichdi with roasted peanut crunch, the vrat favourite of Maharashtra. The original comfort food: rice and dal melting into each other. Top with fried onions and yogurt for the full experience.
Ingredients
- Ginger Garlic Paste1 tsp
- Saltto taste
- Onion1, finely chopped
- Tomato1, chopped
- Green Chili2
- Cumin Seeds1 tsp
- Ghee3 tbsp
- Turmeric Powder1/2 tsp
- Asafoetidaa pinch
- Peanuts1/2 cup, roasted
- Sago (Sabudana)1 cup, soaked
Optional extras
- Fresh Cilantro2 tbsp, chopped
Instructions

Rinse the rice and the sago (sabudana) together till the water runs clear; soak 20 minutes and drain.

Warm the ghee, drop in cumin seeds and let them darken a shade before anything else.

Brown the onion lightly, stir in ginger garlic paste, then the tomato and spices with a splash of water.

Stir in the rice and sago (sabudana), toast briefly, then add water, salt and half the cilantro.

Let the cooker release naturally, beat the khichdi with a ladle till creamy, and serve swimming in extra ghee.
Chef's tip
Resting the finished dish for five minutes off the heat lets the spices settle and deepen.
