Banana Flower Vada
Plantain-flower vada spiced Tamil style, the village evening snack. Craggy, crisp and impossible to eat just one of. Serve with mint or tamarind chutney and masala chai.
Ingredients
- Ginger Garlic Paste1 tsp
- Saltto taste
- Green Chili2
- Turmeric Powder1/2 tsp
- Vegetable Oilfor deep frying
- Curry Leaves2 sprigs
- Asafoetidaa pinch
- Mixed Vegetables2 cups, chopped
- Gram Flour1 cup
- Ajwain1/2 tsp
- Rice Flour2 tbsp
Instructions

Combine the mixed vegetables with the gram flour and the flours; add water slowly — the batter should coat a spoon, not run off it.

Warm the oil till a test droplet sizzles and floats at once; too cool and everything goes greasy.

Drop spoonfuls of the batter into the oil without crowding; they should each have room to swim.

Fry till deep gold, flipping once, then lift out and drain on a rack — paper towels steam the bottoms soft.

Serve hot with chutney and fried green chilies, dusted with chaat masala if you're feeling street.
Chef's tip
A final squeeze of lemon or lime right before serving wakes up every other flavour.
