Samosa Chaat Delhi Style
Crushed samosa under yogurt-chutney rain, the calorie-bragging plate of Lajpat Nagar. Sweet, sour, spicy, crunchy and cold in the same mouthful — chaat logic. Eat at once — chaat has a five-minute window of glory.
Ingredients
- Yogurt2 cups, whisked
- Saltto taste
- Potato3 medium, cubed
- Tamarind Paste2 tbsp
- Chaat Masala1 tsp
- Red Chili Powder1/2 tsp
- Roasted Cumin1 tsp
Optional extras
- Fresh Cilantro2 tbsp, chopped
Instructions
- 1
Boil, fry or toast the base component until the texture is right; cool what needs cooling so the yogurt doesn't slump.
- 2
Whisk the yogurt smooth with a pinch of sugar and salt — it should pour slowly off the spoon.
- 3
Layer the cooked base, then drizzle the green and tamarind chutneys in crossing lines.
- 4
Pour the yogurt over generously, then dust with chaat masala, roasted cumin and chili powder from a height.
- 5
Top with the yogurt, pomegranate seeds and fresh coriander; serve within five minutes, fork optional.
Chef's tip
Whisk the yogurt with sugar; every great chaat walla does.
