
Gobi Ke Pakode Aur Ajwain
Cauliflower florets in ajwain-scented batter, the winter bhaji of Delhi homes. Fried gold, built for rainy afternoons and strong chai. Plate with fried green chilies and a dusting of chaat masala.
Ingredients
- Ginger Garlic Paste1 tsp
- Saltto taste
- Green Chili2, finely chopped
- Turmeric Powder1/2 tsp
- Vegetable Oilfor deep frying
- Asafoetidaa pinch
- Cauliflower1 small, in florets
- Gram Flour1 cup
- Ajwain1 tsp
- Peanut Oil1 cup, chopped
- Rice Flour2 tbsp
Instructions

Mix the cauliflower into a seasoned batter with the gram flour, resting it ten minutes so the flours hydrate.

Warm the oil till a test droplet sizzles and floats at once; too cool and everything goes greasy.

Slide the batter in with two spoons — rough, craggy shapes fry crispest.

Cook three to four minutes a side until the sizzle quietens, then drain on a wire rack.

Pile up, salt lightly, and serve with mint chutney and ketchup within arm's reach.
Chef's tip
Resting the finished dish for five minutes off the heat lets the spices settle and deepen.
