
Maddur Vada Karnataka
Karnataka's maddur vada — crisp semolina-onion discs from the Bangalore-Mysore highway. Hot oil, thick batter, monsoon weather optional — India's favourite snack format. Best with green chutney and a rain outside.
Ingredients
- Ginger Garlic Paste1 tsp
- Saltto taste
- Onion2, finely sliced
- Green Chili2, finely chopped
- Turmeric Powder1/2 tsp
- Vegetable Oilfor deep frying
- Curry Leaves2 sprigs
- Asafoetidaa pinch
- Gram Flour1 cup
- Ajwain1/2 tsp
- Peanut Oil1 cup, chopped
- Rice Flour2 tbsp
- Semolina (Rava)1 cup
Instructions

Make the batter: whisk the semolina (rava) with the onion, gram flour, salt and just enough water for a thick, clinging consistency.

Get the oil shimmering but not smoking; steady medium-high is the fritter zone.

Slide the batter in with two spoons — rough, craggy shapes fry crispest.

Fry till deep gold, flipping once, then lift out and drain on a rack — paper towels steam the bottoms soft.

Serve hot with chutney and fried green chilies, dusted with chaat masala if you're feeling street.
Chef's tip
A spoon of hot oil in the batter makes fritters fry up lighter.
