
Chicken Anardana
Chicken tossed with sour pomegranate seed rub, the Punjabi anardana murgh. Deep masala, tender chicken and gravy built for mopping. Plate with flaky paratha and sliced onions.
Ingredients
- Chicken500 g, bone-in pieces
- Ginger Garlic Paste1 tbsp
- Garam Masala1 tsp
- Kasuri Methi1 tbsp
- Saltto taste
- Onion3, finely sliced
- Tomato2, chopped
- Green Chili2, slit
- Coriander Powder2 tsp
- Turmeric Powder1/2 tsp
- Vegetable Oil3 tbsp
- Red Chili Powder1-2 tsp
- Pomegranate Seeds1/2 cup
Optional extras
- Fresh Cilantro2 tbsp, chopped
Instructions

Wash and pat the chicken dry; marinate with salt, turmeric, chili powder and ginger garlic paste for at least 30 minutes.

Heat oil in a heavy pot and fry the onions till deeply golden — this is the gravy's backbone.

Build the masala: paste, tomato, powders — cook until thick, glossy and clearly done.

Turn the chicken through the masala with the pomegranate seeds, let it sear, then pour in warm water and cover.

Simmer till done — the meat should leave the bone without a fight — then finish with garam masala and cilantro.

Fresh spices make the dish — if yours smell of nothing, the dish will taste of nothing.
