Ingredients
- Yogurt2 cups, whisked

- Tomato3, chopped
- Fresh Cilantro1/2 cup, chopped
- Roasted Cumin1 tsp

Smooth the yogurt out; grainy raita is a texture crime.

Get the tomato ready: raw and crisp, or cooked and cooled; never hot into yogurt.

Fold the tomato into the yogurt with roasted cumin, salt and the green chili.

Let it sit covered; the salt pulls the flavours together.

Serve cold, dusted with the reserved cumin, chili powder and coriander.
