
Chicken Rezala Kolkata
Calcutta rezala — white chicken curry with poppy-cream luxury, the Nizam's legacy. Slow-fried masala meets quick-cooking chicken — timing is everything. Serve with rice, rotis or buttered pav for the gravy.
Ingredients
- Chicken500 g, bone-in pieces
- Yogurt2 cups, whisked
- Ginger Garlic Paste2 tbsp
- Garam Masala1 tsp
- Saltto taste
- Onion3, finely sliced
- Tomato2, chopped
- Green Chili2, slit
- Coriander Powder2 tsp
- Turmeric Powder1/2 tsp
- Vegetable Oil3 tbsp
- White Pepper1 tsp
- Cashews1/4 cup
- Red Chili Powder1-2 tsp
Optional extras
- Kasuri Methi1 tsp
- Fresh Cilantro2 tbsp, chopped

Season the chicken with salt and the ground spices, rub in ginger garlic paste, and let it sit while you build the rest.

Brown the onions properly in hot oil, eight to ten minutes, till bronze and sweet.

Stir in the paste and green chilies, then tomato and spices, frying till the masala darkens and splits.

Stir the chicken and yogurt into the masala, cook five minutes till coated, then add water and simmer.

Cook till the chicken is tender and the gravy coats a spoon; finish with garam masala, kasuri methi and cilantro.

Don't crowd the pan; steam is the enemy of the browning that builds flavour.
