
Chicken Changezi Daryaganj
Old Delhi's Changezi chicken — tomato-cashew gravy lighter than butter chicken, richer than karahi. Deep masala, tender chicken and gravy built for mopping. Best with steamed rice and a cooling raita.
Ingredients
- Chicken500 g, bone-in pieces
- Yogurt2 cups, whisked
- Ginger Garlic Paste2 tbsp
- Garam Masala1 tsp
- Tomato Puree400 g
- Saltto taste
- Onion3, finely sliced
- Tomato2, chopped
- Green Chili2, slit
- Coriander Powder2 tsp
- Turmeric Powder1/2 tsp
- Vegetable Oil3 tbsp
- Cashews1/4 cup
- Red Chili Powder1-2 tsp
Optional extras
- Kasuri Methi1 tsp
- Fresh Cilantro2 tbsp, chopped

Season the chicken with salt and the ground spices, rub in ginger garlic paste, and let it sit while you build the rest.

Heat oil in a heavy pot and fry the onions till deeply golden — this is the gravy's backbone.

Build the masala: paste, tomato, powders — cook until thick, glossy and clearly done.

Stir the chicken and yogurt into the masala, cook five minutes till coated, then add water and simmer.

Simmer till done — the meat should leave the bone without a fight — then finish with garam masala and cilantro.

Don't crowd the pan; steam is the enemy of the browning that builds flavour.
