Cream-and-cheese marinated chicken kebab, the softest thing on the tandoor menu. The smell alone sells the dish. Serve with green chutney, onion rings and lemon.

Ingredients

  • Chicken500 g, bone-in pieces
  • Ginger Garlic Paste1 tbsp
  • Garam Masala1 tsp
  • Heavy Cream1/4 cup
  • Saltto taste
  • Green Chili2
  • Vegetable Oil2 tbsp
  • Lemon1
  • Green Cardamom1 tsp

Optional extras

  • Fresh Cilantro2 tbsp, chopped
  • Chaat Masala1 tsp

Instructions

    Combine the chicken with the heavy cream and seasonings; cover and let the fridge do the tenderising.

    Prepare the skewers and the grill or oven — high heat, clean grates.

  3. 3

    Take the skewers out of the fridge 30 minutes ahead — even cooking starts here.

    Cook over strong heat, turning four times, till charred in patches and just cooked through.

  5. 5

    Rest five minutes, squeeze fresh lemon over, shower with chaat masala and serve with sliced onions and green chutney.

Chef's tip

Taste as you go — chili heat, salt and sourness should all lift each other, not fight.
