
Kalmi Kebab Aur Chaat Masala
Tandoor-roasted wing kebabs with chaat masala finish, the IPL-night standard. Smoke, char and spice — the tandoor tradition, any way you can manage it. Best hot off the grill with cold lassi.
Ingredients
- Yogurt2 cups, whisked
- Ginger Garlic Paste1 tbsp
- Garam Masala1 tsp
- Saltto taste
- Green Chili2
- Vegetable Oil2 tbsp
- Lemon1
- Chaat Masala1 tsp
- Chicken Wings500 g
Optional extras
- Fresh Cilantro2 tbsp, chopped
Instructions

Work the marinade into the chicken wings with the yogurt — massage it like you mean it — and chill for hours, not minutes.

Prepare the skewers and the grill or oven — high heat, clean grates.

Bring the meat to room temperature while the grill heats; cold centres cook unevenly.

Cook over strong heat, turning four times, till charred in patches and just cooked through.

Rest five minutes, squeeze fresh lemon over, shower with chaat masala and serve with sliced onions and green chutney.
Chef's tip
Don't crowd the pan; steam is the enemy of the browning that builds flavour.
