Paneer tikka in angara red marinade, the smoky vegetarian tandoor regular. Marinated deep and grilled hard; kebabs are patience rewarded. Serve with green chutney, onion rings and lemon.

Ingredients

  • Yogurt2 cups, whisked
  • Ginger Garlic Paste1 tbsp
  • Garam Masala1 tsp
  • Saltto taste
  • Paneer250 g, cubed
  • Green Chili2
  • Vegetable Oil2 tbsp
  • Bell Pepper1, sliced
  • Lemon1
  • Red Chili Powder1 tsp

Optional extras

  • Fresh Cilantro2 tbsp, chopped
  • Chaat Masala1 tsp

Instructions

    Work the marinade into the paneer with the yogurt — massage it like you mean it — and chill for hours, not minutes.

    Soak the skewers, warm the grill, and set a rack close to the heat.

    Let the marinade drip off; wet surfaces steam instead of char.

    Grill till the edges catch and blacken slightly — that char is the flavour.

    Rest, then finish with lemon, chaat masala and the red chili powder; serve with onion rings and mint chutney.

Chef's tip

If the masala sticks, add water a tablespoon at a time rather than drowning the dish.
