
Mutton Rogan Kashmiri
Kashmiri rogan josh in its true form — chilli-colour, fennel-scent, no tomato. Mutton rewards patience with a gravy you'll dream about. Plate with naan and a cold beer, frankly.
Ingredients
- Yogurt1/2 cup, whisked
- Ginger Garlic Paste2 tbsp
- Kashmiri Chili Powder1 tsp
- Garam Masala1 tsp
- Saltto taste
- Onion3, thinly sliced
- Tomato2, chopped
- Ghee3 tbsp
- Coriander Powder2 tsp
- Turmeric Powder1 tsp
- Whole Garam Masala Spices2 tsp
- Bay Leaf2
- Mutton500 g, on the bone
- Red Chili Powder2 tsp
- Mustard Oil3 tbsp
- Fennel1 tsp
Optional extras
- Fresh Cilantro2 tbsp, chopped
Instructions

Rub the mutton with yogurt, paste, spices and the kashmiri chili powder; cover and let it sit overnight if you can.

Smoke-point the oil, add whole spices, and let them darken a shade — the base of everything.

Brown the onions hard; the darker they go (without burning), the deeper the final gravy.

Turn the mutton and its marinade into the pot and sear hard, then pour in hot water and scrape the base.

Cook patiently — the gravy should coat the meat, not swim — and rest before serving with the fennel.
Chef's tip
Taste as you go — chili heat, salt and sourness should all lift each other, not fight.
