
Laal Maas Mutton
Rajasthan's laal maas — smoke-roasted chilli heat tempered by garlic and ghee. The festival-pot format: big flavours for many hands. Best with ghee rice and a sharp onion-lemon salad.
Ingredients
- Yogurt2 cups, whisked
- Ginger Garlic Paste2 tbsp
- Kashmiri Chili Powder1 tsp
- Garam Masala1 tsp
- Saltto taste
- Onion3, thinly sliced
- Tomato2, chopped
- Ghee3 tbsp
- Coriander Powder2 tsp
- Turmeric Powder1 tsp
- Whole Garam Masala Spices2 tsp
- Bay Leaf2
- Mutton500 g, on the bone
- Red Chili Powder2 tsp
- Mustard Oil3 tbsp
Optional extras
- Fresh Cilantro2 tbsp, chopped
Instructions

Wash the mutton and marinate with the kashmiri chili powder, yogurt, ginger garlic paste, salt and chili for at least two hours.

Smoke-point the oil, add whole spices, and let them darken a shade — the base of everything.

Take the onions to mahogany, adding a pinch of salt to help them along.

Add the mutton with all its marinade, cook off the rawness, then add water for the long simmer.

Simmer covered till fork-tender, stirring now and then, then boil open to reduce; finish with the yogurt and garam masala.
Chef's tip
Resting the finished dish for five minutes off the heat lets the spices settle and deepen.
