Mutton Kofta Curry

Hand-rolled mutton kofta in nihari-style gravy, the Bhopal Sunday curry. The festival-pot format: big flavours for many hands. Best with ghee rice and a sharp onion-lemon salad.

Ingredients

  • Yogurt2 cups, whisked
  • Ginger Garlic Paste2 tbsp
  • Garam Masala1 tsp
  • Saltto taste
  • Onion3, thinly sliced
  • Tomato2, chopped
  • Ghee3 tbsp
  • Coriander Powder2 tsp
  • Turmeric Powder1 tsp
  • Whole Garam Masala Spices1 tsp
  • Bay Leaf2
  • Red Chili Powder2 tsp
  • Mustard Oil3 tbsp
  • Ground Lamb500 g

Optional extras

  • Fresh Cilantro2 tbsp, chopped

Instructions

    Rub the mutton with yogurt, paste, spices and the whole garam masala spices; cover and let it sit overnight if you can.

    Heat mustard or vegetable oil till shimmering; add the whole spices and let them crackle till fragrant.

    Fry the onions till deep brown — properly brown, ten to twelve minutes; this sweetness carries the curry.

    Add the marinated ground lamb and sear on high, turning, till no pink remains; then add hot water to cover and bring to a simmer.

    Simmer covered till fork-tender, stirring now and then, then boil open to reduce; finish with the yogurt and garam masala.

Chef's tip

Browning the onions properly is 80 percent of the flavour.
