Thin, lacy-edged smash burgers with melty cheddar, pickles and a quick special sauce — diner energy in under 20 minutes.

Ingredients
- Butter2 tbsp
- Salt1 tsp
- Onion1/2, thinly sliced
- Ground Beef500 g (20% fat)
- Cheddar Cheese4 slices
- Mayonnaise3 tbsp
- Iceberg Lettuce1 cup shredded
- Burger Buns4
- Pickles8 slices
- Black Pepper1/2 tsp
Instructions

Portion ground beef into 2–3 oz loose balls; do not pack.

Toast burger buns cut-side down in a hot skillet with butter until golden.

Heat a cast-iron skillet screaming hot; place balls and smash hard with a spatula for 10 seconds.

Season with salt and pepper; cook 60–90 seconds until edges are dark and crisp.

Flip, top with cheddar, cook 30 seconds more; stack double and assemble with mayo, pickles, onion and lettuce.
