- Chicken1 kg pieces
- Salt2 tsp
- Garlic1 tsp powder or minced
- All-Purpose Flour2 cups
- Chili Powder2 tbsp cayenne-style heat
- Paprika1 tbsp
- Neutral Oilfor frying
- Brown Sugar1 tbsp
- Hot Sauce2 tbsp
- Buttermilk2 cups

Instructions

Marinate chicken in buttermilk, salt and hot sauce at least 1 hour.

Dredge in seasoned flour; fry at 175°C until deep gold and cooked through.

Whisk cayenne, paprika, brown sugar, garlic powder into a ladle of hot frying oil.

Brush or dunk the fried chicken in the spicy oil.

Serve on bread with pickles — have a cold drink ready.
