Street-style kothu parotta — shredded flaky parotta wok-tossed with egg, chicken, onion and spicy salna until smoky and shredded.

Ingredients
- Chicken200 g cooked, shredded
- Saltto taste
- Onion1 large, sliced
- Tomato1, chopped
- Garlic3 cloves
- Ginger1 tsp
- Green Chili2, slit
- Turmeric Powder1/4 tsp
- Vegetable Oil3 tbsp
- Fresh Cilantro3 tbsp
- Curry Leaves1 sprig
- Eggs2
- Red Chili Powder1 tsp
- Wheat Flour2 large cooked parottas, shredded

- Lemonwedges
Instructions

Shred leftover or fresh parottas into bite-size ribbons.

Sauté onion, chili and curry leaves; add cooked chicken pieces.

Push aside; scramble eggs on the hot pan.

Add shredded parotta and a ladle of salna/gravy; chop and toss with spatulas until coated and lightly charred.

Finish with cilantro and a squeeze of lemon.
Chef's tip
A hot cast-iron or heavy tawa is everything — kothu needs that street clang and char.
