
Palak Paneer
Punjabi favourite of soft paneer cubes folded into a vibrant, velvety spinach gravy lightly spiced with garlic and garam masala.
Ingredients
- Garam Masala1 tsp
- Heavy Cream2 tbsp
- Saltto taste
- Paneer250 g, cubed
- Spinach500 g, stems removed
- Onion1, finely chopped
- Tomato2, pureed
- Garlic4 cloves
- Ginger1 inch piece
- Green Chili2
- Cumin Seeds1 tsp
- Ghee2 tbsp
Instructions

Blanch spinach in boiling water for 2 minutes, then plunge into ice water to lock in the green colour.

Blend blanched spinach with green chili, ginger and 2 cloves of garlic into a coarse puree. Do not add water.

Heat ghee, crackle cumin seeds, then sauté chopped onion until golden.

Add remaining garlic (minced) and cook 30 seconds, then stir in tomato puree. Cook until the ghee separates.

Pour in the spinach puree, salt and garam masala. Simmer 6-8 minutes on medium flame.

Add paneer cubes, gently mix and simmer 3 minutes. Finish with a swirl of cream and serve hot with roti or rice.
Chef's tip
Never overcook the spinach puree after blending — a short simmer keeps the gravy bright green instead of khaki.
