
Pav Bhaji
Mumbai's iconic street food — a buttery, fiery mashed vegetable curry served with pillowy griddled pav rolls and a wedge of lemon.
Ingredients
- Butter4 tbsp
- Saltto taste
- Onion3 (2 for bhaji, 1 garnish)
- Tomato4, finely chopped
- Garlic4 cloves, minced
- Ginger1 inch, grated
- Fresh Cilantro2 tbsp
- Potato4, boiled
- Cauliflower1/2 head, florets
- Green Peas1 cup
- Bell Pepper1, chopped
- Pav Bhaji Masala2 tbsp
- Lemon1
- Pav Bread Rolls8
Instructions

Pressure cook potatoes, cauliflower and peas until very soft. Mash coarsely and set aside.

Melt 2 tbsp butter, sauté chopped onions until golden, then add garlic, ginger and bell pepper. Cook 3 minutes.

Add chopped tomatoes and cook until they break down into a thick sauce, about 8 minutes.

Stir in pav bhaji masala and salt. Cook 2 minutes until aromatic.

Add the mashed vegetables and 1/2 cup water. Simmer 10 minutes, mashing and stirring — the bhaji should be glossy and thick.

Finish with remaining butter and cilantro. For the pav: slice, toast on a tawa with butter until crisp outside, soft inside. Serve with raw onion and lemon.
Chef's tip
Authentic bhaji gets a startling red colour without chili — that comes from cooking the masala patiently in butter until it darkens.
