
Aloo Gobi
A dry, homestyle curry of golden potatoes and cauliflower tossed with ginger, tomatoes and warm spices — no gravy, all flavour.
Ingredients
- Garam Masala1/2 tsp
- Saltto taste
- Onion1, chopped
- Tomato2, chopped
- Ginger1 inch, grated
- Cumin Seeds1 tsp
- Coriander Powder1 tsp
- Turmeric Powder1/2 tsp
- Vegetable Oil3 tbsp
- Fresh Cilantro2 tbsp, chopped
- Potato3, cubed
- Cauliflower1 medium head, florets
- Green Peas1/2 cup
Instructions

Heat oil, crackle cumin seeds and add grated ginger. Cook 30 seconds.

Add cubed potatoes and fry on medium heat until lightly golden on the edges, about 6-8 minutes.

Add cauliflower florets, chopped onion and salt. Sauté 5 minutes, then cover and cook 8 minutes on low.

Add tomatoes, turmeric, coriander powder and garam masala. Mix gently without breaking the florets.

Toss in green peas, cover and cook another 8-10 minutes until the vegetables are fork-tender.

Uncover, raise heat for 2 minutes to dry any moisture, finish with cilantro and a squeeze of lemon.
Chef's tip
Do not stir too much — toss the pan instead. Aggressive stirring turns aloo gobi into mush.
