
Masala Dosa
Karnataka's golden crispy fermented crepe stuffed with spiced potato masala — served with coconut chutney and sambar for a true South Indian breakfast.
Ingredients
- Saltto taste
- Onion2, sliced
- Ginger1 inch, grated
- Green Chili3, chopped
- Gheefor roasting
- Turmeric Powder1/2 tsp
- Rice2 cups (batter)
- Urad Dal1/2 cup (batter)
- Fenugreek Seeds1/4 tsp (batter)
- Potato4, boiled and crumbled
- Mustard Seeds1 tsp
- Curry Leaves2 sprigs
Instructions

Soak rice, urad dal and fenugreek for 5 hours. Grind to a smooth, flowing batter with minimal water. Ferment overnight with salt.

For the masala: heat oil, pop mustard seeds, add curry leaves, green chilies and ginger.

Sauté onions until soft, add turmeric and crumbled potatoes. Mix well, adjust salt, and rest the filling.

Heat a cast-iron tawa on medium. Pour a ladle of batter and spread outward in a spiral, thin as possible.

Drizzle ghee around the edges and roast until the bottom is deep golden and lacy.

Place potato masala on one half, fold the dosa over and slide onto a plate. Serve with coconut chutney and sambar.
Chef's tip
Sprinkle a few drops of water on the tawa before spreading batter — if it sizzles and evaporates fast, the temperature is perfect.
