
Chole Masala
North India's beloved chickpea curry — dark, tangy, deeply spiced gravy with a perfect anardana-style punch, best with bhature or rice.
Ingredients
- Ginger Garlic Paste1 tbsp
- Saltto taste
- Onion2, finely chopped
- Tomato3, pureed
- Green Chili2, slit
- Cumin Seeds1 tsp
- Chickpeas2 cans (400 g each), drained
- Chole Masala2 tsp
- Coriander Powder1 tsp
- Turmeric Powder1/2 tsp
- Vegetable Oil2 tbsp
Instructions

Heat oil and crackle cumin seeds. Add chopped onions and sauté until deep golden brown — this builds the gravy base.

Add ginger garlic paste and green chilies. Cook 1 minute until fragrant.

Add tomato puree, turmeric, coriander powder and chole masala. Cook 6-8 minutes until oil separates at the edges.

Add chickpeas and 1 cup water. Mash a few chickpeas against the pan to thicken the gravy naturally.

Cover and simmer 15 minutes on low flame, stirring occasionally.

Adjust salt and consistency. Garnish with raw onion slices, ginger juliennes and lemon wedges.
Chef's tip
Simmering longer makes chole better — give it 10 extra minutes if you have time, and it tastes even better the next day.
