
Dal Tadka
Comfort in a bowl — soft yellow lentils finished with a smoky ghee tempering of cumin, garlic and dried red chilies.
Ingredients
- Saltto taste
- Onion1, finely chopped
- Tomato2, chopped
- Garlic4 cloves, sliced
- Cumin Seeds1 tsp
- Ghee2 tbsp
- Turmeric Powder1/2 tsp
- Fresh Cilantro2 tbsp, chopped
- Mustard Seeds1/2 tsp
- Curry Leaves1 sprig
- Yellow Lentils (Toor Dal)1 cup
- Dried Red Chilies2, broken
- Asafoetida1 pinch
Instructions

Pressure cook lentils with turmeric, salt and 3 cups water for 4-5 whistles until completely soft. Whisk smooth.

Heat ghee in a small pan for the tadka. Add mustard seeds and let them pop.

Add cumin seeds, asafoetida, dried red chilies and sliced garlic. Fry until garlic turns golden brown.

Toss in curry leaves and chopped onion. Sauté until translucent, then add tomatoes and cook until mushy.

Pour the tadka over the hot dal and stir well. Simmer 5 minutes to marry the flavours.

Garnish with cilantro and a final spoon of ghee. Serve with steamed rice or roti.
Chef's tip
For dhaba-style smoky dal, give the tadka a 10-second head start with a piece of charcoal dropped into the ghee.
