
Podalanga Poriyal
Snake gourd poriyal with coconut, a Tamil daily curry that is quietly great. A one-pan weeknight sabzi that asks for little and gives a lot. Serve hot with rotis, dal and a wedge of lemon.
Ingredients
- Ginger Garlic Paste1 tbsp
- Garam Masala1/2 tsp
- Saltto taste
- Onion1, finely chopped
- Tomato2, chopped
- Green Chili1-2, slit
- Cumin Seeds1 tsp
- Coriander Powder1 tsp
- Turmeric Powder1/2 tsp
- Vegetable Oil2 tbsp
- Curry Leaves2 sprigs
- Lemon1
- Red Chili Powder1 tsp
- Grated Coconut1 cup
- Snake Gourd2 cups, sliced
Optional extras
- Fresh Cilantro2 tbsp, chopped
Instructions

Dice the snake gourd uniformly, toss with a pinch of salt and let it sit while the masala comes together.

Heat oil in a wide kadhai and crackle cumin seeds; fry the onions till lightly golden.

Tip in the ginger garlic paste and green chilies, then the spices — fry until the oil separates at the edges.

Turn the snake gourd through the masala with the grated coconut, clamp on a lid and let the steam work — check after 10 minutes.

Finish with garam masala, cilantro and a knob of butter for gloss.
Chef's tip
Roasted peanut powder stirred in at the end adds body without cream.
