
Odia Besara
Odia vegetables in pungent mustard-poppy paste, bold and proud. A proper gravy curry — the kind that demands something bread-shaped for mopping. Ladle over steamed rice with sliced onions on the side.
Ingredients
- Ginger Garlic Paste1 tbsp
- Garam Masala1 tsp
- Saltto taste
- Onion2, finely chopped
- Tomato3, chopped
- Garlic6 cloves
- Green Chili2, slit
- Coriander Powder2 tsp
- Turmeric Powder1/2 tsp
- Vegetable Oil3 tbsp
- Mustard Seeds1 tsp
- Mixed Vegetables2 cups, chopped
- Red Chili Powder1 tsp
- Poppy Seeds1 tsp
Optional extras
- Kasuri Methi1 tsp
- Fresh Cilantro2 tbsp, chopped
Instructions

Soften the onions over medium heat till they slump and turn bronze at the edges.

Add ginger garlic paste with a splash of water and scrape up the browned bits.

Cook the tomato down into the spices, wetting with water a spoon at a time, to a thick red masala.

Add the mixed vegetables with the mustard seeds, coat well, pour in hot water to just cover and simmer till tender.

Swirl in cream or a spoon of whisked yogurt off the flame, then shower with cilantro.
Chef's tip
Whisked yogurt goes in off the heat or it will split.
