
Rava Upma Kozhukattai
Tamil steamed upma dumplings, pillowy rava balls with coconut tempering. The 20-minute breakfast that has fed half a billion mornings. Plate with a wedge of lemon and extra fried curry leaves.
Ingredients
- Saltto taste
- Onion1, finely chopped
- Ginger1 tbsp, minced
- Green Chili2, slit
- Turmeric Powder1/4 tsp
- Vegetable Oil2 tbsp
- Urad Dal1 cup, chopped
- Mustard Seeds1 tsp
- Curry Leaves2 sprigs
- Lemon1/2
- Grated Coconut1 cup
- Semolina (Rava)1 cup
Optional extras
- Fresh Cilantro2 tbsp, chopped
Instructions

Dry-roast the semolina (rava) (if using rava or vermicelli) till nutty and just golden; set aside. Flattened rice needs only a rinse and drain.

Pop the mustard seeds in hot oil, add lentils if using, and wait for them to blush gold.

Fry the onions till soft and translucent, add ginger and turmeric; two minutes more.

Tumble in the urad dal and the semolina (rava), sprinkle salt, and toss everything through the fragrant oil.

Rest covered off the heat for five minutes, fluff, and top with the grated coconut and a hard squeeze of lemon.
Chef's tip
Lemon goes in at the end, off the heat, or it turns bitter.
