
Roti Upma
Last night's rotis shredded into spicy upma, zero-waste breakfast. The 20-minute breakfast that has fed half a billion mornings. Best with a cup of strong filter coffee.
Ingredients
- Saltto taste
- Onion2, finely sliced
- Ginger1 tbsp, minced
- Green Chili2
- Turmeric Powder1/4 tsp
- Vegetable Oil2 tbsp
- Mustard Seeds1 tsp
- Curry Leaves1 sprig
- Lemon1
- Flatbread1 cup
Optional extras
- Fresh Cilantro2 tbsp, chopped
Instructions

Dry-roast the flatbread (if using rava or vermicelli) till nutty and just golden; set aside. Flattened rice needs only a rinse and drain.

Pop the mustard seeds in hot oil, add lentils if using, and wait for them to blush gold.

Sweat the onions down, stir in ginger, and let the rawness cook off.

Add the onion, saute a minute, then fold in the prepared flatbread with salt and a splash of water.

Cover on the lowest heat for 3-4 minutes to steam through, then fluff with a fork, finish with lemon, cilantro and, if you like, a spoon of ghee.
Chef's tip
Don't crowd the pan; steam is the enemy of the browning that builds flavour.
