
Masala Bread Upma
Leftover bread reborn as masala upma, hostel-kitchen royalty. Fluffy, tangy, one pan — done before the coffee brews. Serve warm with coconut chutney on the side.
Ingredients
- Saltto taste
- Onion2, finely sliced
- Ginger1 tbsp, minced
- Green Chili2
- Turmeric Powder1/4 tsp
- Vegetable Oil2 tbsp
- Mustard Seeds1 tsp
- Curry Leaves1 sprig
- Lemon1
- Bread4 slices
Optional extras
- Fresh Cilantro2 tbsp, chopped
Instructions

Dry-roast the bread (if using rava or vermicelli) till nutty and just golden; set aside. Flattened rice needs only a rinse and drain.

Pop the mustard seeds in hot oil, add lentils if using, and wait for them to blush gold.

Cook the onions with a pinch of salt till sweet and glassy, then add ginger and the spices.

Tumble in the onion and the bread, sprinkle salt, and toss everything through the fragrant oil.

Steam briefly covered, then cut through the mixture and fluff; squeeze lemon over and shower with cilantro and coconut.
Chef's tip
Lemon goes in at the end, off the heat, or it turns bitter.
