Karnataka tangy poha, tamarind-jaggery spice paste kneaded through. Fluffy, tangy, one pan — done before the coffee brews. Serve warm with coconut chutney on the side.

Ingredients

  • Saltto taste
  • Onion1, finely chopped
  • Ginger1 tbsp, minced
  • Green Chili2, slit
  • Turmeric Powder1/4 tsp
  • Vegetable Oil2 tbsp
  • Mustard Seeds1 tsp
  • Curry Leaves1 sprig
  • Lemon1/2
  • Tamarind Paste2 tbsp
  • Sesame Seeds1 tsp
  • Jaggery3/4 cup, grated
  • Flattened Rice (Poha)2 cups, thick variety

Optional extras

  • Fresh Cilantro2 tbsp, chopped

Instructions

    Toast the flattened rice (poha) in a dry pan until it smells like toast — this is what keeps the final dish fluffy, not gluey.

    Heat oil and crackle mustard seeds till they pop like popcorn, then add curry leaves — stand back — and the green chilies.

    Cook the onions with a pinch of salt till sweet and glassy, then add ginger and the spices.

    Add the tamarind paste, saute a minute, then fold in the prepared flattened rice (poha) with salt and a splash of water.

    Rest covered off the heat for five minutes, fluff, and top with the jaggery and a hard squeeze of lemon.

Chef's tip

Fresh spices make the dish — if yours smell of nothing, the dish will taste of nothing.
