Khara Bath

Karnataka khara bath, upma by another name with better marketing. The 20-minute breakfast that has fed half a billion mornings. Plate with a wedge of lemon and extra fried curry leaves.

Ingredients

  • Saltto taste
  • Onion1, finely chopped
  • Ginger1 tbsp, minced
  • Green Chili2, slit
  • Turmeric Powder1/4 tsp
  • Vegetable Oil2 tbsp
  • Mustard Seeds1 tsp
  • Curry Leaves2 sprigs
  • Lemon1/2
  • Mixed Vegetables1 cup, chopped
  • Cashews1/4 cup
  • Semolina (Rava)1 cup

Optional extras

  • Fresh Cilantro2 tbsp, chopped

Instructions

    Prepare the semolina (rava): roast if it's rava, rinse if it's poha, soak if it needs it.

    Heat oil and crackle mustard seeds till they pop like popcorn, then add curry leaves — stand back — and the green chilies.

    Fry the onions till soft and translucent, add ginger and turmeric; two minutes more.

    Add the mixed vegetables, saute a minute, then fold in the prepared semolina (rava) with salt and a splash of water.

    Rest covered off the heat for five minutes, fluff, and top with the cashews and a hard squeeze of lemon.

Chef's tip

Taste as you go — chili heat, salt and sourness should all lift each other, not fight.
