Ottu Pakoda
Ribbon pakoda, flat crisps that never end. Craggy, crisp and impossible to eat just one of. Plate with fried green chilies and a dusting of chaat masala.
Ingredients
- Ginger Garlic Paste1 tsp
- Saltto taste
- Green Chili2, finely chopped
- Turmeric Powder1/2 tsp
- Vegetable Oilfor deep frying
- Asafoetidaa pinch
- Gram Flour1 cup
- Ajwain1/2 tsp
- Red Chili Powder1 tsp
- Rice Flour1 cup
- Sesame Seeds1 tsp

Combine the rice flour with the gram flour and the flours; add water slowly — the batter should coat a spoon, not run off it.

Get the oil shimmering but not smoking; steady medium-high is the fritter zone.

Slide the batter in with two spoons — rough, craggy shapes fry crispest.

Cook three to four minutes a side until the sizzle quietens, then drain on a wire rack.

Serve hot with chutney and fried green chilies, dusted with chaat masala if you're feeling street.
Chef's tip
A final squeeze of lemon or lime right before serving wakes up every other flavour.
