North Karnataka jowar rotti, thin, soft and yenne-loaded. Flour, water, heat and hands — the oldest bread tradition on earth. Pile in a basket lined with cloth and let everyone grab.

Ingredients

  • Saltto taste
  • Onion2, finely sliced
  • Green Chili2
  • Ghee2 tbsp
  • Sesame Seeds1 tsp
  • Sorghum (Jowar)1 cup

Instructions

    Mix the flour(s) with salt, then add water slowly, kneading 8-10 minutes to a soft, springy dough that springs back when poked.

    Let it rest in a warm spot; the dough should look smoother and feel like an earlobe when ready.

    Portion the dough, stuff and pinch the seams closed, then roll with a feather touch so nothing bursts.

    Slap onto the hot tawa; when dark spots appear, flip and press at the edges with a cloth till it balloons.

    Brush with butter or ghee, stack in a cloth to keep steam-soft, and serve immediately.
