Tandoor-blistered kulcha stuffed with spiced potato, chole's ride-or-die. Soft-centred, blistered and buttered; bread as daily ritual. Pile in a basket lined with cloth and let everyone grab.

Ingredients

  • Butter3 tbsp
  • Saltto taste
  • Onion2, finely sliced
  • Ghee2 tbsp
  • Potato3 medium, cubed
  • All-Purpose Flour2 cups

Instructions

    Combine flour, salt and water into a shaggy mass, then knead till smooth and supple; rest covered 20 minutes.

    Let it rest in a warm spot; the dough should look smoother and feel like an earlobe when ready.

    Portion the dough, stuff and pinch the seams closed, then roll with a feather touch so nothing bursts.

    Slap onto the hot tawa; when dark spots appear, flip and press at the edges with a cloth till it balloons.

    Brush with butter or ghee, stack in a cloth to keep steam-soft, and serve immediately.

Chef's tip

If the masala sticks, add water a tablespoon at a time rather than drowning the dish.
