Karnataka rice-flour rotti pressed by hand onto the tawa. Flour, water, heat and hands — the oldest bread tradition on earth. Serve with any curry, dal or pickle on the table.

Ingredients

  • Saltto taste
  • Onion2, finely sliced
  • Ghee2 tbsp
  • Curry Leaves2 sprigs
  • Rice Flour1 cup
  • Grated Coconut1 cup

Instructions

    Mix the flour(s) with salt, then add water slowly, kneading 8-10 minutes to a soft, springy dough that springs back when poked.

    Cover and rest; use this time to make the filling or get the pan hot.

    Portion the dough, stuff and pinch the seams closed, then roll with a feather touch so nothing bursts.

    Slap onto the hot tawa; when dark spots appear, flip and press at the edges with a cloth till it balloons.

    Slather with ghee, wrap in a clean cloth, and carry to the table warm.

Chef's tip

A final squeeze of lemon or lime right before serving wakes up every other flavour.
