
Kolkata Vegetable Cutlet
Golden vegetable cutlets with crumb crust, railway canteen nostalgia. Craggy, crisp and impossible to eat just one of. Serve with mint or tamarind chutney and masala chai.
Ingredients
- Ginger Garlic Paste1 tsp
- Saltto taste
- Green Chili2, finely chopped
- Turmeric Powder1/2 tsp
- Vegetable Oilfor deep frying
- Potato3 medium, cubed
- Asafoetidaa pinch
- Green Peas1 cup
- Mixed Vegetables2 cups, chopped
- Gram Flour1 cup
- Breadcrumbs1 cup, chopped
- Ajwain1/2 tsp
- Rice Flour2 tbsp
Instructions

Combine the mixed vegetables with the potato and the flours; add water slowly — the batter should coat a spoon, not run off it.

Warm the oil till a test droplet sizzles and floats at once; too cool and everything goes greasy.

Drop spoonfuls of the batter into the oil without crowding; they should each have room to swim.

Let them take their colour slowly; deep gold means cooked centres and shattering crust.

Serve hot with chutney and fried green chilies, dusted with chaat masala if you're feeling street.
Chef's tip
Taste as you go — chili heat, salt and sourness should all lift each other, not fight.
