Crumbled paneer with kasuri methi, the scrambled eggs of India. The dish vegetarians order at restaurants and make better at home. Serve with naan, paratha or jeera rice.

Ingredients
- Ginger Garlic Paste1 tbsp
- Garam Masala1/2 tsp
- Butter2 tbsp
- Kasuri Methi1 tbsp
- Saltto taste
- Paneer250 g, cubed
- Onion2, finely sliced
- Tomato3, pureed
- Green Chili2
- Turmeric Powder1/2 tsp
- Red Chili Powder1 tsp
Optional extras
- Heavy Cream2 tbsp
- Fresh Cilantro2 tbsp, chopped
Instructions

Slice the paneer thick enough to stay proud in the gravy; warm-soak and drain.

Soften the onions slowly — paneer gravies reward gentle beginnings.

Add tomato and the ground spices; cook till the masala thickens and the oil separates at the edges.

Add the kasuri methi if using, then the drained paneer; fold gently — paneer breaks if bullied.

Rest off the heat, finish with the onion, and serve while it's glossy.

Homemade paneer from full-fat milk is a revelation.
