Coorg Chicken
Coorgi koli curry, dark-roast spices and kachampuli sourness from the coffee hills. Slow-fried masala meets quick-cooking chicken — timing is everything. Plate with flaky paratha and sliced onions.
Ingredients
- Chicken500 g, bone-in pieces
- Ginger Garlic Paste1 tbsp
- Garam Masala1 tsp
- Saltto taste
- Onion3, finely sliced
- Tomato2, chopped
- Green Chili2, slit
- Coriander Powder2 tsp
- Turmeric Powder1/2 tsp
- Vegetable Oil3 tbsp
- Black Peppercorns1 tsp
- Vinegar1 cup, chopped
- Red Chili Powder1-2 tsp
Optional extras
- Kasuri Methi1 tsp
- Fresh Cilantro2 tbsp, chopped

Give the chicken a quick marinade — salt, turmeric, chili — so it is seasoned to the bone, not the surface.

Soften the onions down slowly with a pinch of salt till they turn the colour of dark honey.

Stir in the paste and green chilies, then tomato and spices, frying till the masala darkens and splits.

Turn the chicken through the masala with the vinegar, let it sear, then pour in warm water and cover.

Simmer till done — the meat should leave the bone without a fight — then finish with garam masala and cilantro.
Chef's tip
A final squeeze of lemon or lime right before serving wakes up every other flavour.
