
Ambot Tik
Goan ambot tik — sour-hot vindaloo's fish cousin. Fresh fish, hot masala and the confidence to cook it briefly. Best with hot rice and a side of popped papad.
Ingredients
- Ginger Garlic Paste1 tbsp
- Saltto taste
- Onion2, finely sliced
- Green Chili2, slit
- Coriander Powder1 tsp
- Turmeric Powder1/2 tsp
- Dried Red Chilies1 tsp
- Lemon1
- Vinegar1 cup, chopped
- Tamarind Paste2 tbsp
- Fish500 g, steaks
- Red Chili Powder1 tsp
- Mustard Oil3 tbsp
Optional extras
- Fresh Cilantro2 tbsp, chopped
Instructions

Marinate the fish briefly — salt, turmeric, a squeeze of lemon — no longer or it cooks in the acid.

Sear the fish in hot oil, two minutes a side, and remove before it is fully done.

Soften the onions, add paste and tomato with the spices, and bhunao till thick and red.

Nestle the fish into the simmering gravy with the dried red chilies; the residual heat finishes it.

Scatter the vinegar and cilantro, squeeze lemon over, and serve straight from the pan.
Chef's tip
Taste as you go — chili heat, salt and sourness should all lift each other, not fight.
